But somewhere along the way it became the meal I genuinely look forward to every single week. The one I reach for on days when I feel heavy, low on energy, or just off — because it always brings me back to feeling balanced and good without any effort at all.

What You Need
- 180g chicken breast
- 150g napa cabbage
- 2 eggs
- 1 ripe avocado
- 1 cucumber
- 3 tbsp plain yogurt
- ½ tsp mustard
- Salt and pepper to taste

How To Make It
Step 1 — Prepare everything first
Before you start assembling anything, get everything ready. Cook your chicken breast, boil your eggs, wash your cucumber, prepare your napa cabbage, and cut your avocado. Having everything prepped before you start makes the whole process effortless and keeps the textures exactly right. If your chicken is still warm after cooking let it cool slightly first — this keeps the salad fresh and creamy instead of watery.
Step 2 — Chop everything into bite-sized pieces
Cut your cooked chicken into small cubes, slice the eggs, dice the cucumber, finely chop the napa cabbage, and cut the avocado into small but not too tiny cubes. The salad tastes best when everything is easy to scoop up in one bite — a little creamy avocado, some crunchy cucumber and cabbage, soft egg, and satisfying chicken all in every forkful. Keep the avocado pieces slightly larger so they hold their shape and stay creamy rather than turning mushy.
Step 3 — Make the creamy dressing
In a small bowl mix your plain yogurt with the mustard and season with salt and pepper. Stir until completely smooth. This dressing is deceptively simple but it is exactly what makes the whole salad come together — the yogurt keeps it creamy and fresh without being heavy, and the mustard adds just enough depth and flavor to make it genuinely interesting. It should be creamy enough to coat everything nicely but not so runny that it makes the salad watery.

Step 4 — Combine everything gently
Add your chicken, napa cabbage, eggs, cucumber, and avocado into a large bowl. Pour the dressing over everything and fold it all together gently. Do not stir aggressively — especially because of the avocado and eggs. You want everything coated and combined but still holding its shape. This is the moment the salad transforms into something that looks and feels like a proper satisfying meal.
